Khichdi is a dish prepared in almost every household in South Asia.

Ingredients of Spinach khichdi

  1. It’s 1/2 cup of rice.

  2. Prepare 1/2 cup of pink lentils (masoor dal).

  3. You need 1 cup of spinach puree ( blanched and pureed.

  4. You need 1 of chopped small onion.

  5. It’s 5-7 of choppped garlic cloves.

  6. Prepare 1/2 tsp of turmeric powder.

  7. You need 1/4 tsp of cumin seeds.

  8. It’s 1 tbsp of ghee.

  9. It’s to taste of Salt.

It is primarily made of rice and lentils but can also be prepared with different variations.

Spinach or Palak Khichdi is a one-pot meal of Yellow split gram and rice.

It is tempered with spinach, onion, tomatoes and aromatic herbs & spices.

Spinach khichdi step by step

  1. Wash and soak rice and lentils for atleast 20 minutes..

  2. Then add salt and turmeric powder to it. Add 3 cups of water i.e.,1:3 ratio (1 cup rice-dal, 3 cups of water). Pressure cook Khichdi..

  3. Heat ghee, add cumin seeds, once they splutter, add onion, garlic and saute them..

  4. Further add spinach puree and salt and cook for a couple of minutes..

  5. Add cooked khichdi, mix well. Cook for 2-4 minutes on a slow flame. Then turn off the heat. You can add green chillies in spinach puree if you want spicy..

  6. Serve hot with papad, curd etc..
