Prepare 1 tbsp of Shio Koji.

Prepare 1 tbsp of Sugar.

It’s 1/2 tbsp of Mentsuyu (3x concentrate).

Make the homemade teriyaki sauce. (Omit this step if using store-bought sauce).
Drain and press your extra firm tofu to get as much excess water out of it as possible.
Cook over high heat until boiling.

Mix together all of the ingredients for the shio-koji teriyaki sauce..

Wrap the firm tofu in 2 paper towels and let it sit for awhile to drain the water. ( If you leave it in the refrigerator, it will take about 1/2 day to drain most of the moisture)..

Put vegetable oil into a well heated frying pan. Cut the tofu and pan-fry..

Once the tofu has browned nicely, pour in the shio-koji teriyaki sauce and coat the tofu. Turn off the heat..
Boil marinade until reduced and slightly thick.
Turn down heat to very low and start grilling the tofu.
Drizzle reduced marinade over grilled tofu.
The goal is to remove any excess water from the tofu so it's as firm as possible.
