Ingredients of Lauki (bottle gourd) raita

  1. Prepare 2 cup of curd.

  2. It’s 1 tsp of Raita masala.

  3. Prepare 2 cup of water.

  4. You need 1/2 tsp of Cumin seed.

  5. It’s 1 tbsp of Oil.

  6. You need 1 of Green chilli chopped.

  7. It’s 200 grams of Bottle gourd grated.

  8. You need 1 pinch of turmeric powder.

  9. You need 1/2 tsp of Black mustard seed.

  10. Prepare 1 tbsp of Coriander leaves chopped.

  11. You need 1 pinch of Asofoetida (hing).

  12. You need as per required of Salt.

The bottle gourd raita is easy to prepare and does not consume much time.

It is generally served with biryani and pulao or acts as a side dish with a spicy curry and roti.

Lauki (Bottle Gourd) Peeled & shredded ¾ Cup.

Reserve ¼ cup of lauki water.

Lauki (bottle gourd) raita step by step

  1. Grate the bottle gourd then take a pan add water,grated bottle gourd to boil with pinch of turmeric powder 8-10 min in medium flame.

  2. After that take a bowl add curd and water into a bowl whisk it hand blender then add boiled bottle gourd, salt,finely chopped green chillies,raita masala and chopped coriander leaves.

  3. For Tempering. Take a small tadka pan add mustard seed,cumin seed after crackle add pinch of asofoetida (hing).

  4. Add tempring into Raita bowl mix it well together.

  5. U can use homemade raita masala.

  6. Enjoy this raita with meal time.

Namak (Salt) ½ tsp or to Taste.

In saucepan,add water and peeled & shredded bottle gourd,boil until done,strain and reserve ¼ cup of lauki water and set aside. -This is a good way to use bottle gourds.

Ensure that you squeeze out any excess water from the cooked bottle gourd.
