Simple Breakfast egg Lasagna. This lasagna recipe replaces the traditional pasta with eggplant slices and adds layers of seasoned ground beef. The preparation of the eggplant makes all the difference. I've tried other eggplant lasagna recipes, and they were disappointing.

  1. Prepare of Eggs.

  2. It’s of Large Onion.

  3. You need of Tomato.

  4. Prepare of Courgette.

  5. Prepare of Broccoli.

  6. You need of Shredded Cheddar Cheese.

  7. You need of Smokie sausages.

  8. It’s of black pepper.

  9. Prepare of Salt.

Mix eggs, milk, mustard, and onion and pour over layers.

This hearty lasagna would be great for a brunch or even a main course meal.

Layer with four noodles, a third of the eggs and bacon, Swiss cheese and white sauce.

  1. Chop the onion,courgette,tomato,brocolli & smokies separately.

  2. In a pan,shallow fry the the vegetables..

  3. When all done,pour in the cubed smokies and stir everything up till done to your satisfaction.(this process helps remove all the water in the vegetables).

  4. Beat all your eggs with either a mixer or use a whisk.

  5. Once all mixing is done,pour in your shredded cheese to the beaten eggs.

  6. Oil your baking dish.

  7. Pour your vegetable and Smokie mixture into the baking dish.

  8. Pour the egg & cheese mixture evenly to the vegetables & smokie.

  9. Bake it for 16-18mins at 180 degrees..

Repeat layers twice and sprinkle with Parmesan cheese.
