Essentially, minestrone is a thick, hearty variety of vegetable soup, thanks to the addition of beans and sometimes pasta or rice.

Tomatoes, carrots, onion, and celery are usually included, with other vegetables added at the cook's discretion.

Pancetta (optional) - since minestrone is a vegetable soup it's a perfect meal for lent.

Ingredients of Minestrone Soup

  1. You need of onion (1 large – chopped) / 8 oz..

  2. It’s of carrot (3 medium – cubed) / 6 oz..

  3. Prepare of potato (2 large – peeled and cubed) / 16 oz..

  4. It’s of celery (3 sticks – sliced) / 9 oz..

  5. You need of cabbage (shredded) /4½ oz..

  6. You need of spinach (chopped /4½ oz..

  7. You need of plum tomatoes x chopped / 14oz. cans.

  8. Prepare of butter cannellini beans x or / 14oz. cans.

  9. It’s of spaghetti , broken into short lengths / 5 oz..

  10. It’s of tomato purée (or cassata).

  11. It’s of vegetable stock / 60 fl. oz..

  12. Prepare of mixed Italian herbs.

  13. It’s of pepper ground.

  14. You need of garlic powder.

  15. You need of “Spray2Cook” (a word used to describe any low-cal. non-stick cook’s oil spray).

So pancetta, guanciale or lard cut in cubes is completely optional, but it gives an incredible rich, intense flavor to the veggies as if they were cooked in meat stock (which by the way is also an option).

This version is made with cannellini beans, chicken stock, cabbage, potato, zucchini, carrots, plum tomatoes, and Parmesan cheese.

Once the oil is shimmering, add the chopped onion, carrot, celery, tomato paste and a pinch of salt.

Minestrone Soup step by step

  1. Microwave the onion and carrot together for 4 minutes..

  2. Microwave the potato and celery together for 4 minutes..

  3. While the potato and celery are microwaving put the onion and carrot in a large lidded pan, well sprayed with Spray2Cook, on a high heat..

  4. Stir regularly to ensure nothing sticks. Add the potato and celery and (hot) stock. Add the beans, plum tomatoes, tomato purée, herbs, pepper and garlic powder. Bring to boil then simmer for 10 minutes..

  5. Add the pasta, cabbage and spinach - return to a simmer for 15 minutes..

  6. Check the pasta is cooked to you liking and serve..

Stir in beans, zucchini and pasta.

In a stockpot, saute the onions, celery and parsley in oil until tender.

Stir in the broth, tomatoes, tomato sauce, cabbage, carrots, basil, salt and pepper.
