Mix Puttu(Colored Steamed Cake). Puttu is generally cooked in a metal puttu kutti vessel with two sections. The lower section holds water and the upper section holds the puttu — where the rice mixture is inserted with layers of grated coconut. Perforated lids separate the sections to allow the steam to pass between them.

Puttu is a steamed cake commonly made by layering moistened flour (mostly rice flour) and grated coconut.

  1. It’s 2 cups of Rice Flour White -.

  2. It’s 2 cups of rice(kerala rice)flour Red -.

  3. You need 2 cups of flour Yellow (corn)-.

  4. You need 2 cups of Raagi -.

  5. It’s 2 cups of Wheat -.

  6. You need 3/4 to 1 cups of Coconut Grated –.

  7. You need 1/2 – 3/4 cups of Water –.

  8. It’s of Salt.

In my hometown, Kanyakumari district, our ancestors used to make puttu almost every day for breakfast.

Puttu served with kadala kari is one of the most popular breakfast combination from Kerala.

Puttu is basically a steamed rice flour and coconut log.

Mix Puttu(Colored Steamed Cake) step by step

  1. 1.In a large bowl, take all 5 type puttu powders and sprinkle water on the flour separately, same method for all flours(Be careful in mixing water. The perfect combination of water and rice powder gives the good result)..

  2. Add salt to taste and mix it thoroughly with hand. (It should be a bread crumb consistency and not form a dough.).

  3. In a Puttu Kutti (Puttu making vessel -Steamer,easily available in the market) add 1 litre water to the bottom vessel of the puttu maker and allow to simmer till hot. Place the round perforated disc with holes inside the puttu maker such that it fits well at the bottom of the mould..

  4. Place 1 layer of grated coconut at the bottom of the puttu maker. Carefully and slowly add about 4 tbsps of the puttu powder from a height followed by another layer of grated coconut. Again you can layer with 4 tbsps of other puttu powder from a height followed by another layer of grated coconut and finally you can layer with 4 tbsps of other puttu powder and finish off with 1 layer of grated coconut on the top. Place the lid over the puttu mould and place the mould over the bottom vessel….

  5. Steam it for 10 minutes..

  6. Serve hot with Black Channa (Brown Chicpea,Kadala Curry), Boiled Green gram (Cheru payar) with Pappad,Mutta (Egg) Curry or Steamed banana,or ripe yellow banana.

I have used puttu podi available in the markets to make puttu.

Putti podi is coarsely ground rice flour.

Since the traditional puttu maker is quite big, nowadays alternative Puttu maker is available in Indian stores.

I have the puttu maker in the shape of the For breakfast, Puttu is often served with Plantain cooked in coconut milk or sometimes just the Puttu with banana and sugar.

Puttu aka "rice steamed cake" is Kerala's traditional breakfast item.
