First marinate the chicken with all the ingredients of marination and refrigerate at least half hour or overnight..

In a non-stick wok, add oil and add the marinated chicken one by one. Fry for 2 mins each side and remove in a bowl..

Now in the same wok, add ginger and sautรฉ for 30 seconds..

Now add the add the capsicum and onion. Then add sauces, sugar and herbs, sautรฉ for a minute. Mix well..

Now add the fried chicken. Mix well and cook on low flame for 5 mins. Garnish with spring onions..

Then I took the chicken out, slathered it in the mango habanero sauce, turned up the heat on the oven and put them back in for a few minutes to get that sauce all deliciously sticky!
Per usual, I added some chopped green onion on top for a little texture and color.
We also served the extra sauce on the side.
Transfer chicken to a cutting board, reserving sauce in cooker.
When cool enough to handle, remove chicken from bones; discard bones.
