Ofe nsala, as we call it, is a delicacy in Igboland.

Ingredients of Ofe nsala(white soup)

  1. Prepare of full live chicken.

  2. Prepare of small sized raw Yam cubes OR Yam Powder.

  3. Prepare 1 of handfull chopped Utazi Leaves/uziza (optional.

  4. It’s 3 of tablespoonful ground Crayfish.

  5. It’s 1 of medium chopped onions.

  6. Prepare 20 g of smoked/dry fish.

  7. It’s 3 of medium yellow pepper(habanero).

  8. It’s 2 of Stock/Seasoning cubes(maggi, knorr etc) Salt (to taste).

Ofe Nsala - White Soup is a mouth watering delicacy peculiar to the Igbo tribe of Nigeria, especially the people of Anambra state.

It is a very rich fresh fish Ofe Nsala is known as white soup because Palm oil is not used for the preparation, unlike other traditional soups.

Ofe Nsala (Nsala Soup) is a delicious soup, popular in the eastern part of Nigeria.

It is also known as ''white soup" because of its light color , due to the absence of palm oil.

Ofe nsala(white soup) instructions

  1. Properly wash the chicken, smoked and dry fish and set aside then season and cook the chicken with the dried fish, adding onions, seasoning cube and salt to taste. Cook until done and set aside.

  2. Peel the yam cubes and boil until soft, then pound to a smooth paste, using a mortar and pestle.     In the absence of a mortar and pestle, you can place the cooked yam in a food processor/blender, add a little hot water and blend until smooth (you can use the hot water you cooked the yams in).     If what you have is yam powder, boil some hot water,add the powder and stir continuously until you get a smooth paste..

  3. Now add the yam paste bit by bit and leave the soup to cook until the paste is completely dissolved and the chicken is well done. Now, add the pepper, crayfish and smoked fish.

  4. Finally, add the utazi/uziza leaves, taste for salt and simmer for 30 seconds.  Tip: you can decide to pound your uziza/utazi leaf..

  5. The nsala soup is ready best served with pounded yam or semo.

The authentic Nsala soup recipe calls for fresh whole Cat Fish, which gives this soup its unique taste.

Ofe Nsala is also popularly known as white soup (the literal translation) due to the lack of tomatoes or palm oil; ingredients which are typical to Nigerian soups and stews.

This soup is from the Igbo people of Nigeria, particularly people in Anambra state.
