  1. Prepare of garlic, finely chopped.

  2. It’s of hot red chilli peppers, finely chopped with seeds.

  3. You need of water.

  4. You need of granulated sugar.

  5. Prepare of cider vinegar.

  6. Prepare of salt.

  7. It’s of cornstarch / cornflour.

Note: Use gloves while chopping chilies and carefully scrub cutting board when finished.

When sugar is fully dissolved, store in refrigerator until ready to use.

  1. Put the water, sugar, vinegar and salt in a small saucepan and bring to the boil.

  2. Add the garlic and chillies and turn down to a simmer for 3 minutes.

  3. Mix the cornstarch with 2 tablespoons of water to make a slurry then stir it into the pan.

  4. Let cook for a further 2 minutes until the sauce is thickened, syrupy and clear.

  5. Let cool then pour into a sterilized jar, large enough to hold around 240mls / 1 cup.

  6. Keep in the fridge for up to 3 months.

  7. Enjoy with chicken, fish, spring rolls, fries/chips etc.
