Easiest Way to Prepare Appetizing Mithi Khichdi Delicious, fresh and tasty.

Mithi Khichdi. Methi Khichdi is a nutritious one pot meal prepared with fresh methi leaves (vendhya keerai in Tamil), rice, dal and spices. Khichdi is my comfort food and methi khichdi is no exception. It is very easy to make and tastes good.

Today's recipe is for those who like to use methi or palak instead of vegetables.

Khatti Meethi Palak Khichdi Recipe is a delectable khichdi which is packed with taste, flavours and nutrition.  The khichdi is packed with protein and carbs from the rice and dal and the addition of Palak or Spinach into the Khichdi adds to the vitamins and minerals.  Serve the Khatti Meethi Palak Khichdi topped with ghee, sliced onions and papad for a wholesome meal.

Ingredients of Mithi Khichdi

  1. It’s 1 cup of Rice.

  2. It’s 1/4 cup of Moong masoor Dal.

  3. It’s 2 1/2 cups of Warm water.

  4. It’s 1 inch of Cinnamon stick.

  5. Prepare 2 of Cloves.

  6. Prepare 1 of Bay leaf.

  7. You need 1/2 tsp of Turmeric powder.

  8. It’s 1 of Cardamom.

  9. It’s 1/2 tsp of Ground Nutmeg.

  10. It’s 1 tbsp of Cashews.

  11. You need 1 tbsp of Raisins.

  12. It’s 1 tbsp of almonds.

  13. You need 1 tbsp of Sugar.

But you can enjoy this Methi Khichdi whenever you want.

Mithi Khichdi instructions

  1. For Mithi Khichadi.. Rinse rice and dal, soak them together for 20 minutes..

  2. Heat 2tsp ghee in a pan, add the bay leaf, cloves, cardamom pod and cinnamon stick. Cook for 1 minute or until the spices are fragrant. Add the cashews and raisins and cook till lightly brown..

  3. Drain the water from the rice and dal and add it to the cooker by adding one tbsp of ghee.Roast for 2~3 minutes, stirring constantly, until very lightly browned..

  4. Add the warm water, sugar, salt, turmeric powder, ground nutmeg; and prepared seasoning,cover with the lid and cook for 2 whistles.Dish is ready to serve..

  5. Transfer into a serving bowl,garnish with some more cashews.Serve Mithi Khichdi hot.Really heavenly taste.
