Vegetable Khichdi. Making vegetable masala khichdi recipe: Heat the oil in a pressure cooker on medium heat. Once hot add mustard seeds, as they pop add cumin seeds and let them sizzle. Then add chopped onions and crushed ginger, garlic, chili.

Ingredients of Vegetable Khichdi

  1. You need 1 cup of rice.

  2. It’s 3/4 Cup of green chilka dal.

  3. It’s 1 of carrot.

  4. It’s 1 of capsicum.

  5. You need 2 of tomatoes.

  6. You need 1 inch of ginger.

  7. You need few of Curry leaves.

  8. It’s 1 tsp of each salt, red chilli powder,jeeta and rai.

  9. It’s 1/2 tsp of turmeric powder.

  10. You need 2 tsp of ghee.

Add the capsicum and fry for a minute.

In its traditional form, Khichdi consists of mung beans (moong dal) or lentils, cooked with rice (or buckwheat), vegetables and mild Indian spices and can vary greatly depending on the region.

It is considered one of the most healing meals in Ayurveda because it is tri-doshic; balancing all three doshas.

Wash and chop all the vegetables.

Vegetable Khichdi instructions

  1. Heat a cooker, add ghee, rai, jeera and curry leaves. Add chopped carrot and capsicum. Saute for 3 minutes.

  2. Add chopped tomatoes and fry for another 2 minutes..

  3. Add washed and drained rice and dal. Stir it for few minutes. Add salt, red chilli powder and turmeric..

  4. Add 4cups water. Close the lid of cooker. Cook till 5whistles. Open and mix well. Serve hot.

Heat ghee in a cooker and put heeng and cumin seeds into it.

Once the cumin seeds turns brown in colour add black pepper, cloves, turmeric powder, green chilli and ginger.
