The Linzer Torte, like the Linzer cookies, features an almond-based dough with preserves in the center.

In a bowl of an electric mixer, mix the butter (room temperature) until creamy.

Add the powdered sugar and mix. Than add in the same bowl, the egg yolks, vanilla extract, lemon or orange zest and mix for 2 minutes..

Add the almonds flour, baking powder and a pinch of salt. Mix!.

Finally add the flour all at once. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and pit it in the fridge for 20 minutes..

Roll the dough 1/4 inch and cut 2 3/4 inch rounds with a plain or fluted cutter. With 1/2 of the rounds, cut a hole from the middle of each round with a heart or round small shape. I cut them with a star shape…

Place all the cookies on an ungreased baking sheet and chill for 15 minutes..

Bake the cookies until the edges begin to brown. Allow to cool to room temperature..

Spread apricot or strawberry jam on the flat side of each solid cookie. Dust the top of cut-out cookies with powdered sugar and press the flat sides together with the raspberry jam in the middle and the powdered sugar on the top.
