Firstly boil water in a pot to cook rice… add star anise, salt and peppercorns to it… boil rice in it and drain water. Keep aside.

In a wok/kadhai heat oil n add chopped ginger garlic n chopped chilles.. saute for 2 mins then add chopped onions fry till golden then add quartered cut mushrooms, yellow capsicum and baby corns (check pic for cutting). Saute for another 2 mins and then add salt, chili powder, chopped basil and coconut milk… cover lid and cook till the veggies are tender…

Add boiled rice and mix everything well…. then garnish with some torn basil and chopped chilies.. serve hot.
Add sautéed mushrooms and cooled rice to serving bowl, pour on dressing and toss well.
Serve at room temperature, garnished with basil and peanuts or cashews, if desired.
