Recipe: Perfect Whole Lentil Soup with Spaghetti Delicious, fresh and tasty.

  1. You need 1/2 cup of boiled Chick peas.

  5. It’s 1 cup of Spinach roughly chopped.

  8. You need 3-4 of crushed Garlic pods.

  9. Prepare 1 of Green chilli chopped.

  10. Prepare 2 tablespoon of Olive oil.

  11. It’s 2 tablespoon of Butter.

  12. It’s 2 glass of Vegetable stock/Water.

  13. You need to taste of Salt.

  14. It’s 1/2 teaspoon of Crushed Black Pepper.

  15. You need 2-3 tablespoon of Sour cream.

  16. You need as needed of bread sliced of your choice.

The pasta will continue to cook in the heat of the soup.

Leave garlic cloves whole and it will melt nicely into the soup.

Sprinkle grated Romano cheese on top to make it more delicious.

Adding pasta to this soup makes it extra hearty and I strongly recommend storing leftover farfalle separately from the soup (as it tends to absorb all the liquid and get very soggy).

Whole Lentil Soup with Spaghetti instructions

  1. Chop 1 onion into small pieces and slice another onion into thin pieces..

  2. Heat a saucepan with olive oil and saute chopped onion for a minute..

  3. Add chopped garlic and saute for few seconds..

  4. Add turmeric powder and mix..

  5. Next add soaked red whole lentil, boiled chick peas and chopped green chilli. Give a good mix..

  6. Pour hot vegetable stock or water..

  7. Add salt and simmer for about 1/2 an hour to cook lentils completely..

  8. In the meantime heat butter in a pan and start frying thinly sliced onion..

  9. Fry till onions become golden brown and crisp..

  10. Transfer the crisp onion in a paper towel..

  11. In the same pan toast some bread slices with the leftover onion flavoured butter..

  12. Keep aside..

  13. When lentils cooks completely slide the spaghetti in the hot soup..

  14. When the spaghetti becomes soft add the chopped herbs. Cook for another 5 minutes..

  15. Before removing sprinkle 1/2 teaspoon black pepper, check the seasoning. Add salt if necessary..

  16. Transfer the soup into serving bowls, top with some sour cream and brown onion. Serve with toasted bread slices..

Cook the pasta until al dente, according to the package directions.

Drain, then return the pasta to the pot and set it aside.

Stir the marinara into the lentils and warm them together over medium heat.

Divide pasta into bowls, top with warm marinara and lentils, and garnish with Parmesan and/or chopped fresh basil, if you'd like.
