Green Lentil Soup. This soup is both delicious and very easy to make. The curry gives it a flavor unlike any other green lentil/split pea soup I have ever had. I have made this soup several times already and cannot get enough of it.

The combination of potatoes, carrots and lentils topped with baby spinach is a delightful paring!

In general, lentils make a great addition to your meals.

Add in lentils, stock, and tomatoes w/ juice; bring to a boil.

Ingredients of Green Lentil Soup

  1. You need 1 of Red bell pepper.

  2. You need 1 of White or yellow onion.

  3. You need 3-4 of Whole chives.

  4. Prepare 1 teaspoon of cumin.

  5. It’s 2.5 pounds of or 3g of Green lentils.

  6. It’s to taste of Salt.

  7. It’s 5 cloves of garlic (optional).

  8. It’s 1 of tomato or tomato paste (preferably without peel).

  9. You need of Water to cover ingredients.

  10. Prepare 1 tbsp of Chicken bouillon (optional).

  11. You need 2 tbsp of Sofrito cooking base.

  12. You need 1/4 cup of Green peas.

  13. You need 1/4 cup of diced peeled carrots.

  14. Prepare 1/2 cup of green beans.

  15. It’s 1/2-1 cup of yellow squash (calabaza).

  16. You need 1/4 cup of sweet corn.

Discard bay leaves; season to taste with salt and pepper.

Ladle into heated bowls and garnish with reserved bacon.

All it takes is a hint of spice flavourings, bay leaves and finishing it off with a touch of lemon to elevate this soup.

Green Lentil Soup step by step

  1. Rinse lentils then add to pot with enough water to cover completely..

  2. Add red pepper (roughly chopped in large pieces), onion (cut in half), garlic, chicken bouillon, whole chives, tomato (whole or paste), salt.

  3. Stir, combing ingredients then Bring to a simmer, cover, and let cook for 20 minutes..

  4. After 20 minutes, lower flame to Med low and remove onion, whole tomato, chives, and red pepper from pot and set aside to mix in blender..

  5. Stir lentils and taste water to check if desired salt level has been achieved. If not, we can add more salt after blending remaining ingredients..

  6. Take ingredients we set aside (red pepper, tomato, chives, onion) and add to blender (or food processor) and make a purée with these ingredients. Add salt if desired then add purée back to lentils stirring to combine and simmer on medium for another 20 minutes or until lentils are at desired tenderness..

  7. Serve with rice or bread!.

Lentils seem to go well with just about anything, and here they play well with a collection of greens and some cumin and coriander to add a gentle spicy note to this soup recipe.

The result is a hearty winter soup with layers of flavor.

Both French green lentils (available in natural-foods stores and specialty markets) and more commonly available brown lentils are delicious in this soup.
