Aloo Tamatar, is flavorful and delicious and the best part is that it goes well with all different kinds of bread and rice.

Cook the tomatoes until they are soft and mushy.

Add the other spices coriander powder, turmeric, chili powder and ginger, stir fry until tomato start separating from oil.

  1. Wash Baingan and Tomatoes properly..

  2. Put some oil on the outside body of brinjal and then Cut from half,leaving on end attached (uncut) and keep it on the gas to roast for about 5-7 minutes.(rotate it regularly during the process so that it can roast properly..

  3. Also roast tomatoes on the gas..

  4. Now  brinjal gets roasted,remove its outer black burnt skin..

  5. Take a Bowl,Put all the chopped materials(onion,garlic,coriander leaves and green chilies) into the bowl..

  6. Add boiled potatoes,roasted Brinjal and tomatoes into the bowl..

  7. Add salt and 2-3 drops of mustard oil into it..

  8. Mash it well  and your chokha is ready..
