Sambhar. Some variations of sambhar include ingredients such as moong dal and pumpkin. Since a variety of mixed vegetables are also used to make sambhar it becomes nutrient rich. Sambar recipe shared here is the one which has been followed by my mum for several decades.
I have tried so many recipes of sambhar before but to no avail.

Ingredients of Sambhar

Prepare 1 Bowl of Tur Dal Boiled.

Prepare 1 of Drumsticks Cut In 2 Inch Size.

It’s Pinch of Asafoetida.

Sambhar instructions

Cook tur dal for 30 mins.

Boiled all the chopped vegetables like piece of drumstick,brinjal,pumpkin and onion and tomato for 15 -20 min.

Add tamarind paste, chilli powder, turmeric, sambhar masala and salt and add mixture of boiled tur dal and boiled vegetables in one pan and boil for 2-3 min with with all the masala.

Now tempering time.

Heat the oil in a kadai add oil add mustard seed, fenugreek, cumin seed after crackle of all seed add pinch of asafoetida then add curry leaves and red sabut mirch 1 piece.

Add tempering to the mixture then boil for another 2 min.

Garnish with freshly chopped coriander leaves.

Serve hot with idli, uttapa, wada and dosa.
