Easiest Way to Make Appetizing Mr. Mike's Crawfish Cornbread Delicious, fresh and tasty.

Mr. Mike's Crawfish Cornbread. This Cajun-inspired treat is somewhere between a cornbread and a casserole, and will pair nicely with a big bowl of jambalaya. I've had many versions of crawfish cornbread but they're usually dry. I like to add cajun seasoning.

Crawfish Cornbread is loaded with crawfish and has a wonderfully crispy crust.

The inside is fabulously moist and savory.

Because there's a full pound of crawfish tails, lots of cheese, onion, peppers and creamed corn added to this cornbread, it's almost more like a cornbread quiche.

  2. You need 2 box of jiffy cornbread mix.

  3. It’s 1 of small onion, chopped.

  4. Prepare 1 of small bell pepper, chopped.

  5. You need 1/2 cup of jalapeno, diced.

  6. Prepare 2 cup of shredded cheddar cheese.

  7. It’s 1 of 8-ounce can corn, drained.

  8. It’s 1 of (8-ounce) can cream corn.

  9. It’s 3 of eggs.

  10. You need 1 lb of crawfish tails, precooked and rough chopped.

  11. It’s 1/2 stick of butter.

I was thinking about making Crawfish Bread again, but I remembered I had this killer Crawfish Cornbread recipe I got from a Christmas Beat the eggs in a large mixing bowl.

Add the remaining ingredients to mixing bowl and combine well.

Toss in the crawfish tails and mix them into the mixture.

The original recipe called for green pepper and jalapeno which I am sure would also be great.

Mr. Mike's Crawfish Cornbread instructions

  1. Preheat oven to 350°F..

  2. In a medium size skillet over medium heat, melt the butter and sauté the onion, bell pepper, and jalapeno until the onions are translucent. Set aside to cool..

  3. Mix together the cornbread mix, eggs, corn, and creamed corn in a large bowl..

  4. Stir in the chopped crawfish tails and cheddar cheese. Mix well to combine..

  5. Stir in the sauteed vegetables and stir to combine..

  6. Spread the cornbread out in a greased 9x13 baking dish and bake in the oven for 45-55 minutes..

  7. Allow to cool for 10-15 minutes.

I added some Cajun seasoning and Seafood seasoning which is beautiful with the crawfish.

In a bowl, combine cornmeal, salt and soda.

In medium bowl, beat eggs, chopped onions and Jalapeno Peppers.

Gently fold in crawfish, cheese, and vegetable mixture.
