And while you may not find them gracing a dinner table, they are still commonly found around Spain, just a little earlier.

This albondigas soup recipe was given to me from my mother-in-law.

It's definitely one my favorite soups.

  1. It’s 1 lb of ground turkey or beef.

  2. You need 1 c of cooked, packed white rice.

  3. You need 3 cloves of crushed garlic.

  4. Prepare 1/4 c of chopped fresh parsley.

  5. You need 1 of large egg.

  6. You need 2 tsp of salt.

  7. You need 1 tsp of paprika.

  8. You need 1 tsp of ground cumin.

  9. It’s 1/2 tsp of fresh ground pepper.

  10. It’s 1/4 tsp of dried oregano.

  11. You need 1 tbsp of olive oil.

  12. It’s 1-1/2 quarts of chicken stock, plus more as needed.

  13. You need 1 of large carrot, chopped.

  14. Prepare 1/2 of an onion, chopped.

  15. It’s 1 of small zucchini, chopped.

  16. Prepare 2 of tomatoes, chopped.

  17. Prepare 2 of small potatoes, peeled and chopped.

  18. Prepare 1 of avocado chopped (optional).

  19. You need to taste of Salt and pepper.

  3. Pour chicken stock into large saucepan. Add potatoes, carrots, zucchini, onion and tomatoes and bring to boil. Reduce to a medium simmer, stirring occasionally, about 10 minutes..

  4. Transfer meatballs to broth. Turn heat to high. Once broth returns to a boil, reduce heat to medium-low, cover and cook 20 minutes or until meatballs are no longer pink in center and vegetables are tender..

  5. Serve over rice and sprinkle cilantro over top. Add avocado to top (optional)..
