Litti Chokha is traditional dish of Bihar. It is basically an evening snack served with chokha made out of potato,brinjal and tomato,It is tasty snack recipe.

Litti, along with chokha, is a complete meal originated from the Indian state of Bihar.

It is also popular in Jharkhand and parts of Eastern Uttar Pradesh.

Ingredients of Litti Chokha

  1. You need of For the dough.

  2. You need 3 cups of whole wheat Atta.

  3. Prepare 3 tablespoon of refined or mustard oil.

  4. You need 1 cup of Warm Water for kneading the dough.

  6. It’s 1 1/2 cup of Sattu, flour of roasted Bengal gram.

  14. It’s 1/2 teaspoon of garam masala.

  15. It’s 1/2 teaspoon of salt or to taste.

  16. Prepare 1 tablespoon of Coriander leaves chopped.

Litti is basically consists of wheat and sattu (powdered roasted blackgrams ) formed into balls with spices, and then dipped in ghee.

Okay I know most of you would not have even heard of it.

Litti Chokha step by step

  1. For the Dough Mix atta and vegetable oil thoroughly so that it becomes crumbly..

  2. Add water and Knead to make dough. (It should be stiff and harder than the dough for making roti.).

  3. Divide the dough into 10 equal parts..

  4. For the Filling Mix all the ingredients well with a little water so that the mixture is powdery and samp..

  5. It should not be too dry or too wet..

  6. For the litti- Take one part of the dough and shape into a ball..

  7. Now hold it between your fingers and press with your thumbs to make it cup shaped..

  8. Fill a generous amount of sattu filling in this cup shaped dough..

  9. Bring the edges together carefully to seal it and make a round ball. (Seal it properly so that the filing does not come out.).

  10. Likewise make all litti balls..

  11. Now for roasting I have used gas tandoor (We can roast them in otg or microwave also).

  12. Put all the litti balls in pre-heated tandoor grill and roast in medium heat for 20-25 minutes..

  13. Keep turning the litti balls over periodically say about every 5 minutes to ensure that they are roasted evenly and are crisp..

  14. Take out the litti from the tandoor grill and apply little pressure with your palm to make an opening and dip each litti in the melted ghee..

  15. See that the ghee fills inside the litti..

  16. For the chokha-Slit the brinjal along one side to just check if it is clean from inside (ensure that it is not cut into two halves)..

  17. Roast the slit brinjal and washed tomatoes on gas flame or grill for about 15 to 20 minutes..

  18. Keep turning the brinjal and tomatoes over periodically to ensure that they are evenly cooked till the skin of the brinjal and tomatoes turn black and the pulp is soft and juicy..

  19. Remove the charred black skin and put the cooked pulp in a bowl..

  20. Mash it and mix the rest of the ingredients in the bowl. The chokha is ready..

  21. Serving/ plating Serve littis with generous helping of ghee and chokha and some fresh green salad as accompaniment..

  22. My tip The litti can be half done and then fried in desi ghee to make them crispy and golden coloured.
