Ingredients of Chettinad Prawn Pepper Fry

  1. You need 250 gm of prawns, cleaned & devein.

  2. You need to taste of salt.

  3. You need 1 tsp. of turmeric powder.

  4. It’s 3 tbsp. of oil.

  5. It’s 2-3 of green cardamoms.

  6. You need 2 inch of cinnamon stick.

  7. You need 5-6 of cloves.

  8. You need 2 of star anise.

  9. Prepare 1 tsp. of mustard seeds.

  10. Prepare 1 tsp. of fennel seeds.

  11. You need pinch of fenugreek seeds.

  12. It’s 3 of onions, sliced.

  13. Prepare 1 tbsp. of garlic, sliced.

  14. It’s 1 tbsp. of ginger, sliced.

  15. Prepare 2-3 of green chilies, slit.

  16. You need 2 sprigs of curry leaves.

  17. It’s 1/4 tsp. of asafoetida.

  18. You need 1 tbsp. of coriander powder.

  19. Prepare 2 of tomatoes, chopped.

  20. Prepare 1 tsp. of cumin powder.

  21. Prepare 1 tsp. of garam masala powder.

  22. It’s 1 tbsp. of pepper powder, coarsely ground.

  23. You need 1 tsp. of red chilli powder.

  24. It’s 1/2 cup of coriander leaves, chopped.

  25. Prepare as needed of juice of 1/2 lime.

Chettinad Prawn Pepper Fry step by step

  1. Marinate the prawns with a pinch of salt, turmeric powder and red chilli powder for 10-15 minutes..

  2. Make a paste of all the dry powdered spices (garam masala powder, turmeric powder, coriander powder, cumin powder and red chilli powder) except salt with some water to form a paste. Keep aside..

  3. Heat 1 tbsp. oil in a pan and fry the prawns for 2-3 minutes. Drain and keep aside. Heat the remaining oil and temper with whole spices - mustard seeds, fennel seeds, fenugreek seeds, cinnamon, cardamoms, cloves, asafoetida and star anise. Saute for a few seconds..

  4. Add onion, ginger, garlic, green chilies & curry leaves. Saute till light brown..

  5. Add the tomatoes and fry till it is mashed..

  6. Then add the spice paste and fry till oil separates..

  7. Add the fried prawns and salt. Mix well..

  8. Add 1/2 cup water & cook, covered for 2-3 minutes on a low flame..

  9. When done, add coriander leaves, pepper powder & lime juice. Give it a stir. Serve with either rice or chapatis..

It is very good for young children, pregnant ladies and for lactating young moms.
