This is my favourite, because I am Mix this brinjal masala to the cooked rice, gently so that it is evenly mixed.

First cook 2 cup rice added with salt. Keep it aside to cool..

Take a pan add oil, stir fry cashews, it turns golden, take out in a plate…

Add mustard seeds, urad dal, chana dal, hing, ground nuts, green chilli, red chilli, curry leaves, cinnamon, cloves, stir it for a minute..

Add cut brinjals, add salt, turmeric powder, mix well, cover a lid, cook it, till brinjal turns soft..

Then add red chilli powder, coriander powder, vangi bhaat masala, tamarind pulp, jaggery, mix well, add some cashews and cooked rice..

Mix well, cover a lid for couple of minutes..

Turn off gas, Vangi Bhaat, Brinjal Masala Bhaat, Ringana Kaju Bhaat is ready to serve…

Garnish with fried kaju and sprinkle chopped coriander on it. Serve hot…
