  6. Add the shrimps and stir fry for 2 minutes..

  7. Move the contents of the pan to one side, Add a tbsp of oil in the centre of the pan, and crack an egg over it. Quickly scramble the egg and cook for a minute..

  8. Add the spring onions green stalks and the crushed peanuts, reserving a few for garnishing. Mix and stir-fry for a minute..

  9. Remove Pad Thai into a serving plate and garnish with crushed peanuts, spring onions (greens), a few shrimps and lemon wedges..
