  19. Prepare 2 cups of Basmati Rice.

  21. You need 4 of Green Cardamoms.

  22. You need 1 inch of Cinnamon stick.

  23. Prepare 2 of Bay leaves.

  25. You need 2 tbsp of Ghee.

  26. You need as per taste of Salt.

  27. It’s 31/2 cups of Water.

  29. It’s 2 tbsp of Ghee.

Serve it with parathas, biryani or jeera rice, and feel free to substitute.

Put the browned chicken back into the pan, along with any juices that have collected under them, and sprinkle over the garam masala, sugar, and salt.

Mughlai Chicken Biryani instructions

  1. Clean and wash chicken pieces..

  2. Blend together all the ingredients for ground masala and make a fine paste..

  3. Add this paste in chicken pieces..

  4. Add all the ingredients mentioned For marination and mix well..

  5. Set aside for at-least 1 hour..

  6. Heat 2 tbsp oil in a pan..

  7. Add the marinated chicken..

  8. Add Kashmiri chilli powder, biryani masala, water and mix well..

  9. Cook on medium heat until the chicken is cooked well and the gravy becomes thick..

  10. Add salt if needed and set aside..

  11. Wash and soak the rice for 20 minutes..

  12. Drain the water completely and set aside..

  13. Soak saffron in warm milk and set aside..

  14. In a big pan or cooker heat ghee..

  15. Add whole spices mentioned for rice..

  16. Add soaked and washed rice and fry for a minute..

  17. Add water and salt..

  18. Close the lid and cook till 3/4 done or in cooker cook for 1 whistle..

  19. Let it cool completely..

  20. In a biryani pot, add 2 tbsp of ghee and spread the ghee evenly to the bottom of the pot..

  21. Then put the prepared half of chicken masala, and spread it evenly..

  22. Then layer half of the rice over the chicken masala..

  23. Sprinkle ¼ cup fried onion and chopped coriander leaves..

  24. Then layer rest of chicken masala..

  25. Again layer the rest of the rice on top of it..

  26. Sprinkle remaining fried onion, chopped coriander leaves and half of fried Cashews and raisins..

  27. Finally, pour 1 tbsp of melted ghee and the saffron milk on top..

  28. Close the biriyani pot with a tight fitting lid..

  29. Put the biryani pot on the stove, and cook for about 15 minutes over low flame..

  30. Remove from heat, mix the rice and chicken from the bottom of the pan using a long spoon..

  31. Serve hot with Raita or salad..
