  2. Prepare 4 of -potatoes boiled,peeled and grated.

  4. You need 2 tsp of Turmeric powder.

  5. Prepare 1/2 tsp of red chilli powder.

  1. Boiled,peeled and grate the potatoes. Add salt and red chilli powder and mix. Cover and keep aside..

  2. Wash the eggplants and cut it into 1/2 inch thickness in round shape with the help of knife. Keep it in a plate and apply some salt and Turmeric powder on both the sides..

  3. Heat 1 tbsp oil in a pan.add eggplant round pieces in pan.first cook one side and flip it and again cook.cook both the sides until brown spots appears on both the sides..

  4. Spread some grated potatoes on top of the brinjal. If you have 8 round pieces of brinjal then spread potatoes on only 4 pieces. Keep the remaining 4 pieces to cover it..

  5. Now cut the cheese into round shape and place it over the grated potatoes. Then cover with remaining cooked brinjal pieces. Like this cover all 4 pieces of brinjal. Turn it over and cook both the sides apply some more oil till it crispy..

  6. Remove from heat and sprinkle some chaat masala over it.serve hot..

Brinjal needs to be cooked slowly in oil.

But we do not prefer much oil in our cooking.

So to reduce oil usage comparatively but not compromise with the final taste, i cook stuffed brinjals half in the cooker.
