You need 3 of Brinjal (thickly diced).

Garnish with spring onions and serve the Brinjal yoghurt gravy with chapathi, which is an unleavened flatbread from the Indian Subcontinent.
Add remaining oil and the curry leaves.
Also if you prefer a runny salna rather than thick gravy variety then add extra water.
I prefer thick creamier brinjal gravy so added less water while cooking.

Heat oil in a pressure cooker and stir fry moong daal badi till it becomes golden brown in colour then shift it in a plate..

Now in the same oil, add cumin seeds, asafoetida and bay leaves and allow it to crackle..

Now add all the rest ingredients stir fry them for 4-5 minutes..

Now add water as per your need and cook it for 2 vessels..

Your brinjal and moong daal badi sabji is ready to serve now..
