This is her Gosht Masala or Lamb Curry.

Ingredients of Lamb Curry (Gosht Salaan)

  1. Prepare 1 kg of Lamb.

  2. You need 1 1/2 of Onions.

  3. Prepare 1 1/2 of tomatoes.

  4. Prepare 1 of Green chilli.

  5. You need 4 cloves of garlic.

  6. You need 12 grams of Fresh ginger.

  7. It’s 1 tbsp of Yoghurt (optional).

  8. It’s 3 of Whole cloves.

  9. It’s 2 of Whole green cardamons.

  10. You need 1 of Whole black cardamon.

  11. It’s 1 small of cinnamon stick.

  12. Prepare 1 of Bay leaf.

  13. Prepare 1 tsp of Red chilli powder.

  14. You need 1 tsp of Salt.

  15. Prepare 1/3 tsp of Tumeric powder.

  16. You need 1 tsp of Paprika.

  17. You need 1 tsp of Ground cumin.

  18. You need 1 tsp of Ground coriander.

  19. You need 1 tsp of Garam masala.

We usually use lamb that is on the bone as this gives more flavour.

Add Lamb to the cooker and mix it well now add tomato and mix it well.

Close the pressure cooker lid and let it cook for two whistles.

Lamb Curry (Gosht Salaan) step by step

  1. Peel the onions garlic and ginger. Remove skin from the tomatoes.

  2. Slice onions and fry in some cooking oil until brown.

  3. Remove onions from pan when browned.

  4. Add all the ingredients from the plate to a food processor..

  5. Add a teaspoon of each spice, but just a 1/3 tsp of tumeric from the spice pot. You may vary the quantity according to your personal taste. Add a tbsp of yogurt (optional) a little water and blend to a smooth paste

  1. Your paste will look like this.

  2. Add the whole spices to the pan.

  3. Add the lamb to the pan and fry for about 5 mins until sealed.

  4. Add the paste to the lamb.

  5. Cover with water and reduce to a medium heat and allow to cook for about 30 mins or until lamb is cooked through. Stir the pot inbetween making sure water is not drying too quickly.Taste spice levels and add more if necessary..

  6. As the water begins to dry saute the lamb until all the water has dried.

  7. Add 1-1 1/2 cups on water depending on how thick you would like your gravy to be. Cook on a medium heat for about 5-8 minutes..

  8. Garnish with fresh coriander and serve with rice naan or chapatti. Enjoy!.
