Paleo Paella. Paella is widely regarded as a Spanish dish, though it is truly a regional dish to Valencia. This particular version is called "Paella Mixta," (literally meaning "mixture) which has a combination of chicken and shrimp. Enjoy this exotic dish to spice up any weeknight meal!

Traditional Spanish Paella is usually made with rice, chicken, meat, seafood, and saffron.

It makes a fantastic special dinner - see my step by step photos below.

This is definitely a dish to feed the masses!

You can cook Paleo Paella using 16 ingredients and 6 steps. Here is how you cook it.

Ingredients of Paleo Paella

  1. Prepare 16 oz of chicken breasts.

  2. It’s 12 oz of shrimp.

  3. Prepare 12 oz of clams.

  4. Prepare 3 of andouille sausage.

  5. It’s 3 of roma tomatoes.

  6. You need 1 of red pepper.

  7. It’s 3 tbsp of olive oil, extra virgin.

  8. Prepare 1 of white onion.

  9. Prepare 1 of saffron.

  10. Prepare 1 of cayenne pepper.

  11. Prepare 1 of turmeric.

  12. You need 1 of paprika.

  13. Prepare 3 oz of bone broth.

This one pot meal is a paleo take on Spanish Paella that can be completely customized!

This recipe is a great way to use up some of those leftover veggies you have in the refrigerator and feed your entire family!

Regardless, this paleo rendition of paella using cauliflower rice is truly every bit as flavorful as the original, with shrimp, chorizo and jambon, finished with a spicy garlic sauce that'll knock your socks off.

Paleo Paella instructions

  1. Use a food processor to make the cauliflower rice.

  2. In a pot pan, boiled the cauliflower rice with the bone broth until soft.

  3. In a paella pan or frying pan, sautee the garlic and the onion until the onion is transparent.

  4. Add to the pan the red peppers, chicken, and sausage. When the chicken is almost ready, add the seafood.

  5. Add the cauliflower rice to the pan. Add spices and garnish with parsley and green onions.

  6. Add hot sauce if desired.

Perfect for low carb, paleo, or any other grain free, whole foods approach.

This means that not only can I eat it, but it makes this dish Paleo (and even more Paleo if one uses coconut oil instead of olive.

But I don't go THAT far with Paleo foods)!

Now…I make Paella without any seafood in it, so I'm not sure if it entirely counts as traditional Paella.
