To the onion in the pan, add the spices, ginger paste, garlic paste, plain yogurt, green chillies and salt.
In a pan, heat oil and add onions and fry them until brown and add tomatoes and fry until they are soft.

First of all wash brain nicely.

Than put it in a vessel and fill with water..

Add salt and Turmeric in water and let brain boil for 15-20 minutes.

After that take out from vessel and remove all the veins and coverings. And keep a side.

Take a wok and add oil in it. Add cumin seeds and onions.

Fry onions till light golden than add ginger garlic paste and sautay for 1-2 minutes.

After that add all dry spices and mix..

Now add chopped tomatoes and mix. Cook till tomatoes become soft and mix till oil seperated from masala. Add lemon juice.

Now add brain and gently mix with masala. Chopped brain in small chunks with the help of spoon and mix..

Keep on simmer for 5 minutes. Turn off heat.

Dish out and Sprinkle green chillies and coriander and serve to your family with nan.
