Soft cookie-like Wagashi with white bean jam & rice flour. This sweet is made from bean jam & rice flour. It's also good to add a little egg. I made sweet white bean paste"Shiroan" or "Shiro-koshi-an".shiro is white in Japanese.

There is an enormous variety in the world of wagashi (traditional Japanese confectionery), but many of the recipes for wonderful shapes, flavours and textures are created from a base of a simple white bean paste known as shiro-an.

You can cook Soft cookie-like Wagashi with white bean jam & rice flour using 4 ingredients and 7 steps. Here is how you achieve that.

  1. You need 150 g of Shiro an (white kidney bean paste containing sugar).

  2. It’s 15 g of Joshin ko (rice flour).

  3. It’s 1 g of Baking powder.

  4. It’s 0.5-1 tsp of Matcha.

It's not quite as easy as it looks, but being able to make a good shiro-an is a. "Kanten (agar)" is a popular ingredient for Wagashi, especially in summer.

It looks like jelly but it's made from seaweeds.

  3. Dissolve 0.5-1 tsp of Match powder in a little water. Mix the Matcha and one half of the dough. Wrap it with paper towel to take its water..

  4. Divide a plain dough in to 6. Divide the Match dough in to 6, too..

  5. Make flowers with the plain dough and Matcha one. And put them on a baking tray of a microwave oven with a baking paper..

  6. Heat them at 500W for 1minuites & 30 seconds (or 2min.) in a microwave oven..

  7. Cool them in the oven and take them out..

I like to use this Konashi for making Nerikiri Wagashi because it's less sticky and easy to make.

Konashi is made from white bean jam and cake flour (+ a little Mochi flour).

The top white is "Karu kan" made from Japanese yam potat.o, sugar and rice flour.

Inokomochi is a red bean jam ball wrapped with very soft and slimy Mochi.
