Bitter leaf soup is popularly eaten by the Igbo speaking people of Eastern Nigeria, and The people of Cameroon.

Called Ofé Onugbo by the Igbos, the Cameroonians.

Home for a couple of days and decided to make bitter leaf soup a.k.a. 'ofe onugbu'.

Bitter Leaf Soup, also known as Ofe Onugbu is a popular and delicious Nigerian soup.

It is peculiar to the Igbo tribe of Eastern Nigeria.

Wash the Bitter leaves with hot water to get rid of as much bitterness as you can.

Bitter Leaf Soup(Ofe Onugbu) instructions

  1. Wash and season your meat with two knorr cubes and salt, the boil till tender, half way boiling your meat add the stock fish.

  2. Boil and extract the juice from your palm nut then pour in your cooking pot and set on fire, allow to Cook for ten minutes.

  3. Next add the meat and meat stock to the pot then continue to cook for about ten minutes, then add the dry fish and pepper cook for few more minutes then the achi and allow to start thickening.

  4. Lastly, add the bitter leaf, taste and adjust the taste with the remaining knorr cube and salt, allow to thicken to your desired consistency then bring down.

There should be almost no hint of bitterness left in the leaves after washing.
