Ingredients of Kolmi Shaag Bhaja (Water Spinach Stir Fry)

  1. It’s of Kolmi shaag (water spinach).

  2. Prepare of raw banana, boiled & cut into small cubes,.

  3. Prepare of onion, chopped.

  4. It’s of garlic cloves, chopped.

  5. You need of mustard oil.

  6. It’s of bori / mangodi / vadi.

  7. You need of kalonji (nigella seeds).

  8. You need of dry red chilli, broken.

  1. Discard the stems of the greens and chop finely. Keep aside. Heat oil and fry the vadi till golden brown in colour. Drain and keep aside. When cool, crush it coarsely..

  2. Temper the same oil with red chilli and kalonji. Saute for a few seconds. Add the boiled raw bananas and fry for a minute..

  3. Then add cumin powder & turmeric powder. Saute for a minute..

  4. Then add the onion and garlic and continue to fry till light brown..

  5. Add the chopped greens & salt. Fry on a low flame till they are cooked & dry..

  6. When done, add the crushed bori / vadi and give it a stir. Serve hot with plain steamed rice or chapatis..

Add the water spinach and the sauce, then toss until the sauce is well distributed and the water spinach is slightly.
